Ingredients
3 Tbsp. Fresh Harvest Garlic Olive Oil, divided
2 Tbsp. Mexican Fiesta Rub & Seasoning
Salt & pepper to taste (optional)
1 tsp. Oh! So Garlic
2 boneless, skinless chicken breast, sliced into strips
3 small bell peppers, thinly sliced (red, green, orange)
1 onion, thinly sliced
8 small tortillas
Instructions
Preheat oven to 250°F. Heat 1 tablespoon Fresh Harvest Garlic Olive Oil in a cast-iron grill pan or frying pan over medium-high heat. Add chicken and sprinkle with 1 tablespoon Mexican Fiesta Rub & Seasoning, salt and pepper. Cook for 10 minutes, until thoroughly cooked, remove from pan and set aside. Heat remaining 2 tablespoons oil over medium heat; add peppers and onion. Sprinkle with remaining Mexican Fiesta Rub & Seasoning and Oh! So Garlic. Cook until vegetables are tender crisp, about 6-8 minutes, stirring occasionally; add chicken to the pan to heat. While veggies and meat are cooking, wrap tortillas in tin foil and warm in oven. To assemble fajitas, fill warmed tortillas with chicken, peppers, and onions. Top with favourite garnishes: guacamole, salsa, sour cream, etc...
